Quick, Simple & Delicious Recipes with Mango Pulp

1. Mango Kulfi

Summer days call out for frozen treats and there is nothing that fits quite right like Kulfi. It is an indian version of ice cream and is made with milk, milk solids, mango puree, nuts and flavoured with cardomom, This creamy & smooth dessert with mango pulp is the ultimate summer must-have!

Cooking time: 30 minutes
Servings: 15 people

Ingredients:

  • 4 cups whole fat Milk
  • 1.5 cups of milk powder
  • 1 can of condensed milk
  • 2 cups mango pulp
  • 2 tbsp nuts (chopped)
  • 1 teaspoon cardamom powder
  • 1.5 tablespoon of cornstarch (dissolved in 3 tablespoons of milk or water)

Cooking Instructions:

  • Pour whole milk into a pan and keep it on medium heat. Let the milk simmer and then keep the heat on a medium-low.
  • Add to it the milk powder and keep stirring until mixed well
  • Next, add the condensed milk and mix it.
  • Put in Chopped nuts
  • Let the milk boil gently on low heat for 20 minutes. It will continue to thicken as it cooks.
  • After the milk thickens, put the cardamom powder and mix it well.
  • Dissolve the cornstarch into milk or water until it attains a smooth consistency. Then, add this cornstarch into the milk and keep whisking till combined.
  • Let the milk come to a boil gently after adding the cornstarch and keep stirring it continuously. It should thicken to the point such that it should coat the back of a spoon.
  • Remove the pan from the heat and then let the milk cool completely.
  • Once the milk has completely cooled down, add the mango puree.
  • Mix the mango pulp with the milk until fully combined.
  • Transfer the prepared kulfi mixture into plastic cups or kulfi molds (according to your preference).
  • Cover each mold with aluminum foil and store in the freezer.
  • Once the kulfi is slightly less (such as for 1.5 hours or 2 hours), remove it from the freezer and put an ice cream stick in the middle of each mold.
  • Place the kulfi in the freezer again, and freeze until set, ideally overnight.
  • To de-mold the kulfi, you can either run a knife around the edges or place the molds in warm water for a few seconds & then pull gently.
  • Garnish it with pistachios and serve your delicious and creamy mango kulfi!

2. Mastani

You are bound to be impressed by how quick and simple it is to make as well as it’s intense mango flavour that will be a treat for your tastebuds.

Cooking Time: 10 minutes
Servings: 2 people

Ingredients:

  • 3 or 3.5 cups mango pulp
  • Few Chopped nuts like almonds, pistachio and cashews
  • 2 or 3 tbsp chopped mangoes
  • 2 or 3 tbsp sugar (add as required)
  • 1.5 cups full cream milk
  • 2 scoops of vanilla or mango ice cream

Cooking Instructions:

  • Add 3 or 3.5 cups of mango pulp to a blender along with milk, according to the consistency of the pulp and the thickness you want for your drink.
  • Add 2 to 3 tablespoons of sugar in the blender jar
  • Put in 1.5 cups full cream milk
  • Add ice if needed
  • Blend until smooth and milkshake consistency
  • Check for sugar, if needed. Add if less. If mangoes are already sweet, there is no need to add sugar
  • Pour the thick mango milkshake into a glass.
  • Add two scoops of ice cream
  • And finally, garnish with chopped mangoes and nuts.

4. Mango Modak

Mango modaks are an ideal dessert to make, you could make this as an offering for lord ganesha or serve it as a sweet dessert for your family. They are rich, delicious and melt in the mouth. Here is how to make this recipe with mango pulp

Ingredients

  • 1 cup grated khoya, mawa, or evaporated milk solids
  • ½ cup mango pulp
  • ¼ cup sugar
  • 1 pinch of saffron strands (optional)
  • ¼ teaspoon of cardamom powder
  • 1 teaspoon oil or ghee, or as needed for greasing the modak molds

Cooking Instructions:

  • Grease the modak moulds with oil or ghee and place aside
  • Heat a pan by keeping the flame to low and add in 1 cup of grated khoya
  • Keep stirring the khoya for 1 or 2 minutes until it melts
  • At this point, add in the ¼ cup of sugar and continuously keep stirring for a minute or two till the sugar completely dissolves, The mixture should now have a molten consistency.
  • Add the mango pulp and mix until it is combined well.
  • Keep stirring this mixture on a low to medium flame for 6 to 8 minutes till it becomes thick and reduces.
  • Add the pinch of saffron strands along with ¼ cup of cardamom powder (elaichi).
  • Keep stirring the mixture for more 5 to 7 minutes on a medium flame.
  • Soon, you will notice that the color and texture of the mixture will change
  • Again, keep stirring it on low flame, till the modak mixture starts to leave the ends of the pan. Be careful not to overcook it.
  • Immediately switch off the flame and move the mixture in another bowl or thali.
  • Let the mixture cool down a bit and become warm
  • Next to make the modaks, begin to make small balls from the warmed mixture.
  • Place the balls into the greased molds.
  • Press the index finger towards the centre so that the ball takes the shape of the mould it is in.
  • Repeat the same process with the others.
  • Put the modaks on a greased plate or thali.
  • You are ready to serve the modaks to your family warm or chilled.

  • ½ cup milk

Cooking Instructions:

  • Start by heating ghee and slowly add the semolina & stir on a low flame for 6-7 minutes.
  • Now add the milk, sugar and 2 cups hot water and start stirring while cooking it on a medium flame.
  • Turn off the gas stove and add mango pulp and mix well.
  • Garnish with chopped almonds
  • Serve it warm to your family members or guests.
